Can anyone tell me the differences with the default winter scheme? And how to set it up, please.

Winter and hard or harsh Winter are just 2 season variation in FS:
Fall....
Nov 21 : Non snow winter starts
Dec 22 : Hard winter starts (actual snow)
March 18 : Hard winter ends, goes back to non-snow winter
Apr 18 : Spring
